Sheet Pan Lemon Herb Salmon with Asparagus and Cherry Tomatoes

For the Salmon:
2 (4-6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
½ lemon, thinly sliced
1 clove garlic, minced
1 teaspoon fresh dill, chopped
½ teaspoon fresh thyme leaves
Salt and freshly ground black pepper to taste
For the Vegetables:
1 bunch asparagus, trimmed
1 cup cherry tomatoes, halved
1 tablespoon olive oil
Pinch of salt and pepper

Step 1: Prepping the Oven and Veggies (The Foundation)

Now, let’s get that lovely salmon ready for its flavour bath. Place the salmon fillets on the same baking sheet as the vegetables, making sure there’s a little room between them and the veggies. In a small bowl, whisk together 1 tablespoon of olive oil, minced garlic, chopped fresh dill, and fresh thyme leaves. Spoon this herby mixture evenly over the top of each salmon fillet. Season the salmon generously with salt and freshly ground black pepper. Finally, place a few thin slices of lemon on top of each salmon fillet.

Slide that baking sheet into your preheated oven and let it roast for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
